RECIPE OF THE WEEK:



SWORDFISH SANDWICHES
1/4 Cup Extra Virgin Olive Oil
Salt and freshly ground black pepper
Juice of one lemon
2 Cloves garlic, pressed or minced
1 Teaspoon fresh or freeze dried dill
4 (6 oz) nicely trimmed swordfish steaks, about 1 inch thick
1 loaf focaccia bread
Romaine lettuce, spine removed

Lemon mayo:
2/3 Cup Mayo
zest of one lemon
2 Tablespoons fresh lemon juice
1 Clove garlic, pressed or minced
Salt and freshly ground pepper to taste

Serves 4

Stir together first five ingredients, place swordfish in container for marinating, pour marinade over and refrigerate for at least one half hour.  Meanwhile put together Lemon may recipe and refrigerate. Cook on grill or grill pan over medium heat. Cut focaccia loaf into four pieces and slice.  Liberally slather with mayo add swordfish and lettuce.  Enjoy!
